Brown Sugar Oat Muffins

I should probably mention that I am not a cook or a baker. I cooked pretty much the basics throughout college. So now with more time on my hands and a desire to eat better, I've been looking into making more homemade stuff.

So today I finally tried the muffins I've been wanting to make. The recipe is from The Taste of Home Cookbook (2009). They sounded slightly sweet and very delicious. So here is the recipe and what I used!



1 cup oats (I used regular rolled oats)
1 cup whole wheat flour (Bob's Red Mill organic)
1/2 cup all purpose flour (Gold Medal - I should find an organic brand!)
3/4 cup brown sugar (Food Club.. it was cheap..)
2 tsp baking powder (Calumet)
1/2 tsp salt (some off brand)
2 eggs
3/4 cup milk (Market Pantry skim)
1/4 vegetable oil (Crisco)
1 tsp vanilla extract (McCormick's)

As you can see, a lot of the ingredients aren't organic. Once I use up these containers, I'm going to look into better options!

Combine oats, flours, brown sugar, baking powder and salt.


Mix the eggs, milk, vanilla and oil.


Mix the wet ingredients into the dry ingredients until moist (don't mix too much).

Grease or paper line the muffin pan. Fill muffin cups 2/3 full.



Bake for 15-17 min at 400 degrees. A toothpick (or fork) will come out clean when they are ready!




Taste test: They are amazing! Just a little sweet. I highly suggest them!
