I saw a recipe recently for fruit salsa and decided I had to try it. I've been wanting to eat more fruit, and this is a perfect way! It's sweet and slightly tangy which is amazing!
Ingredients:
2 Kiwi
2 Pink Lady Apples
1 Container Strawberries
1 Container Raspberries
1/4 c Sugar (approx. - sweeten to taste)
I cut up the fruit (and peeled the kiwi), then put them into a food processor. I blended it until it was about the consistency of salsa. I then stirred in sugar gradually until it was just sweet enough. Cover and put into the refrigerator, then make the cinnamon sugar chips!
Ingredients:
4 Flour Tortillas
1/2 Stick Melted Butter
1c sugar
1 tbsp cinnamon
Preheat the oven to 350 degrees. Spread the butter onto one side of the tortillas. Mix the cinnamon and sugar, then sprinkle it on. Cut into pieces (I recommend using a pizza cutter and cut into "pizza slices"). Lay the chips on a baking sheet in a single layer and bake for 8-10 min.
I was absolutely amazed at how good this was. You can always tweak the recipe as well to add fruits you like, or subtract ones you don't. I'd suggest sticking with fruits that are sweet and tangy though. This also makes a lot so it's great for entertaining!

30 Day Shred
I got Jillian Michaels' 30 Day Shred DVD a few months ago with the intention of doing it every day. Well I ended up getting sick and giving up on it. So now that I'm trying harder to lose weight, I've decided to start again. I'm not doing it every day, but I am exercising almost every day. I've been mixing in other workouts with the 30 Day Shred DVD and I'm hoping I can stick with it this time!
I highly recommend this DVD to anyone looking to tone up and lose some weight and doesn't have a ton of time to do it. The workout itself is 20 minutes, plus a couple minutes of warmups and cooldowns. There are 3 levels of the workout. I've only been doing level 1 so far, but I'm starting to get to the point where I'd feel comfortable trying level 2. The workout is not easy for inactive people. The first time I ever tried it, I was completely sore the next day! But don't let that discourage you. It DOES get easier over time!

Having a bad couple days
I've been SO HUNGRY! I have no idea why. I haven't been drinking as much water, so maybe that has something to do with it. I gave in at the grocery store yesterday and bought some doughnuts. BAD IDEA! Of course they taste delicious. But after I eat one, I feel like crap. I've never felt so bad after eating something (physically and emotionally). Maybe this is a sign that I really can change.
I've been pretty hard on myself for not eating well and not working out as much as I should. But I need to remember to not let it get to me. Slip ups are fine. Just don't make a habit out of it! I need to pick myself back up and do what I need to do instead of sinking further down. A lot of times I let myself spiral out of control, but it's NOT going to happen this time.
For anyone else having the same problems, you're definitely not alone! Don't let your mistakes get you down. Take a lesson from them and move on!

Brown Sugar Oat Muffins
I should probably mention that I am not a cook or a baker. I cooked pretty much the basics throughout college. So now with more time on my hands and a desire to eat better, I've been looking into making more homemade stuff.
So today I finally tried the muffins I've been wanting to make. The recipe is from The Taste of Home Cookbook (2009). They sounded slightly sweet and very delicious. So here is the recipe and what I used!
1 cup oats (I used regular rolled oats)
1 cup whole wheat flour (Bob's Red Mill organic)
1/2 cup all purpose flour (Gold Medal - I should find an organic brand!)
3/4 cup brown sugar (Food Club.. it was cheap..)
2 tsp baking powder (Calumet)
1/2 tsp salt (some off brand)
2 eggs
3/4 cup milk (Market Pantry skim)
1/4 vegetable oil (Crisco)
1 tsp vanilla extract (McCormick's)
As you can see, a lot of the ingredients aren't organic. Once I use up these containers, I'm going to look into better options!
Combine oats, flours, brown sugar, baking powder and salt.
Mix the eggs, milk, vanilla and oil.
Mix the wet ingredients into the dry ingredients until moist (don't mix too much).
Grease or paper line the muffin pan. Fill muffin cups 2/3 full.
Bake for 15-17 min at 400 degrees. A toothpick (or fork) will come out clean when they are ready!
Taste test: They are amazing! Just a little sweet. I highly suggest them!

Hello! This is my new blog. I've been wanting to start this for a while but never really got around to it. I've also been wanting to start this new life for a while but kept falling backwards. But now I'm committed!
Why am I so committed? Well the main reason is to lose weight. I used to be pretty skinny without really trying. But sometime in college I got lazy, ate crap, and just didn't care that much. I don't know how, but I packed on about 70 pounds. Yes, you read that right. I don't like talking about my weight a lot because I've been pretty self conscious about it. So I started ignoring it and denying it. I'm not really that fat. I didn't really gain that much. And it was partially true - I never crossed the 200 mark, so my weight hasn't been completely out of control. But at my height and age, I should really weigh a lot less.
Now that I'm engaged and planning a wedding (yay!), I am finally getting the motivation I need. Who wants to look like a cow in their wedding dress? I don't want to look through the pictures and have to pick out the ones I don't look fat in. I want to look and feel GREAT on my wedding day!
So that's the main motivation. I've also been wanting to start doing things that are just plain good for me. I've been altering the way I view a lot of things. I'm looking for more natural foods. I've been making my own household cleaners. I've been getting off my butt and doing something physical as much as I can. I'm hoping that combining these things will help me live a better life!
